No info on the the 11” but I’m on the M2 12.9 which I absolutely love, but I have to admit the battery life isn’t the greatest.
Battery life alone would be reason enough. The current difference in the OSs is the main reason though. Additionally if you do go iPad the 12.9 is closer to a laptop replacement than the 11. Noticeable difference in productivity between the two with the 12.9 actually allowing for two apps to go “full” in split screen.

iPad Pro M1 11 inch vs 12.9 inch. Hey guys, I would appreciate some advice on what iPad I should get. I’m in the process of upgrading my 2017 iPad Pro to an m1 iPad Pro. However after finding out that the 12.9 inch iPad has an xdr display which I understand to be the display where black is really black, I’m unsure whether it’s worth it

If the speakers matter to you get the 12.9. The 11-inch speakers are not actually special, even tho it's quad speaker. Speakers are better only when there is a larger sound chamber and for that you need more space. This will especially be noticed when using spatial audio or watching movies, as larger speakers have a wider range.

As a laptop replacement, I would say the 12.9" offers some better pros: full sized apps for split screen ability, full sized keyboard, a more "square" sized screen for better vertical view, larger screen size For portability, yes. The 11" is better.
My opinion, better off getting a MacBook Air (to handle any school work) and get a iPad 9th Gen (to read books, watch YouTube, take notes). I personally did not like writing on a iPad, I prefer the traditional pen and paper. 12.9” 256GB cost $1,200 M1 MacBook Air + iPad 9th Gen cost $1,329. 1.
Best affordable : 9th gen iPad. Decent every thing and I don’t know what 120hz mean: iPad Air. Want the face ID and 120hz but 12.9 is too big: iPad Pro 11 inch. Want the biggest and the best : iPad Pro 12.9. Reading (books/mangas) and compact usage : iPad mini.

In my experience the difference in portability is noticeable and if that is a key driver for you I would go straight for the 11”. Also, given the uses you mentioned any of the pro versions offer you more power than you need and the experience is delightful in any of them but with the money you will save in acquiring the 11” you can buy the pencil and a good cover.
